School’s out, which means that summer is here! I’m craving simple and refreshing combinations of garden vegetables. This simple summer salad fills that craving perfectly.

I’ve been enjoying this salad as a mid-afternoon snack, and I love it because it’s quick and easy to make. I can buy two of the four ingredients at my local farmer’s market, and the protein-rich chickpeas help me feel full.

I usually eat five small meals a day, and this is perfect to help me make it to dinner. It’s also a great side with any protein dish.

For the Italian dressing, I recommend using Annie’s Homegrown Tuscany Italian Dressing because it is free of gluten, dairy, and soy. It’s also delicious!

Makes 4-6 servings as a side

Ingredients:
Steps:
  1. Rinse and drain the chickpeas.
  2. Chop the cucumber and tomato.
  3. Combine the chickpeas, cucumber, and tomato with the Italian dressing.
  4. Enjoy! Cover and refrigerate leftovers.

  2. Mine would have to be sans tomatoes, never liked them, I think it’s a texture thing. Other than that it looks really good! I don’t think I made a salad with chick peas before.

    1. Maybe you could substitute bell peppers for the tomatoes! I love the chickpeas- they make the salad really filling!

  5. This looks very yummy and healthy. I would just make it without tomatoes because I don’t like those personally. But it looks very simple which this busy mama needs!
